To get list of open orders you can use below logic.

Select open orders from VBUK (Header Table for Order status)  table where GBSTK (Overall Processing Status of document) is not equal to C

Pass them to VBUP and then select all the items where GBSTA not equal to C.

Hope this gives all open orders item wise.

Now you can use this logic in a FM based extractor or create a table and then build your extractor on that. I am not sure about Amount part. Maybe you can consult SD guys...
